The very first warm day we had a couple of weeks back, of course I had to bust out some mojitos! They are quite possibly my favorite cocktail. Super refreshing, flavorful and just downright delicious.
If you want a quick and easy way that you can whip them up anytime without muddling together mint, sugar and lime, read on.
I decided last summer to have mojitos available to me long after the mint I bought at the store wilted away. How did I do this you say? Well, I made mint simple syrup.
Simple syrup may have it’s name from being ridiculously easy to make. I have no idea. But with simple syrup the possibilities are endless with flavor infusions. Use this mint version to make mojitos or give a kick to fresh lemonade or iced tea.
If you feel like once you put the ingredients together it doesn’t taste quite right – some people like their cocktails very sweet! – feel free to add more sugar, rum, lime etc.
So sit back, relax, put your feet up and enjoy this delicious concoction.
For the Simple Syrup:
1 c. water
1 c. granulated, white sugar
6 stems of mint leaves, with leaves on
For the Mojitos:
To make the simple syrup, in a small saucepan, combine water and sugar. Swirl the pan around. Cook on medium heat until the sugar dissolves. About 5-8 minutes. Remove from heat. Add the mint and let cool completely on the counter. After it cools, pull out the mint leaves and set aside in the fridge. This keeps in an airtight container for about a month.
For each mojito, put ice in a glass. Add a shot (or more if you prefer) of rum, 2 tablespoons mint simple syrup, and 1/4 of a lime juiced into the glass (drop that lime into the glass when you’re done squeezing the life out of it!). Top with club soda until the glass is full. Garnish with a sprig of mint if you’ve still got some lying around!
If you’d like to make a pitcher, just guesstimate the amount of glasses your pitcher will fill and then add the corresponding amount of ingredients.
