What can you do with the leftover basil, mini heirloom tomatoes and mozzarella (assuming you bought a 16 oz. block like I did) from your pizza? Make a salad!
This recipe is super easy and quick. I’ve been eating it for years and it may be one of my favorite salads.
Tomato & Mozzarella Salad
½ pkg. mini heirloom tomatoes, sliced in half
½” slice of fresh mozzarella, diced into small cubes
¼ to ½ small onion, sliced
4 leaves of basil
1 tbsp. olive oil
Salt & pepper to taste
Crispy Italian bread, optional
In a medium sized bowl, put the tomatoes and some salt (maybe about ½ tsp) and pepper (about 1/8 tsp… I told you, I don’t measure!), stir and let rest – this brings out juices of the tomato for bread if you want it! Slice and dice the onion and the mozzarella, place in the bowl with the tomatoes and stir. Tear fresh basil leaves into the salad just before serving and mix. Drizzle with olive oil and serve! If you have the bread, sop up the delicious juices at the bottom of the bowl (a family favorite!).
PS – this mixture, minus the mozzarella, is amazing mixed in with cottage cheese for another healthy lunch kicked up with protein!
